Clean boneless chicken strips with salt.

Cut the chicken strips into even small strips.

In a hot kadai, add oil, Shallow Fry the chicken pieces with salt, pepper and soya sauce

Saute and keep aside.

For the schezwan paste:
Soak 10-15 dry red chillies in hot water. Let it sit for 10-20 mins.

In a blender add 1/2inch ginger, 5-6 garlic cloves, coriander shoots, soaked dry chillies and blend into a coarse paste.

For the noodles:
In a hot pan/wok, add oil, scramble 1 beaten egg with salt. Set aside.

In the same pan add oil, ginger and garlic finely chopped, finely chopped spring onions(only the green onion part)

Add onions and finely chopped vegetables.

Add chilli paste and saute

Add little water and white vinegar 1 tsp

Add eggs and Chicken and saute well.

Add Boiled noodles and toss well. Check seasoning.

Garnish with Spring onions
